This is one of the most traditional dish of Andhra pradhesh(South Indian State). My entire family visited our uncle in Vizhag during a summer break (1994). After our tiring day at Araku valley, with hunger pangs at its peak, we walked to a nearest roadside eat out to taste my first PESARATTU. I am madly.... deeply....truly... in love with it since then. :-))))))) As we entered the shop, we literally rushed to the place where he was making those yummy dosas. The beautiful aroma filled the May air and smelling the dish doubled our hunger.He made 4-5 dosas at a time and immediately served us with coconut chutney and hot sambhar. He had sprinkled raw onions over the dosa and this made every bite crunchy. Woooooowwww really irresistible taste!!!!

So everytime I visit Andhra, I would defenitely taste this dosa made from the humble whole green gram. I made a litttle variation to the original recipe by adding spinach along with the green gram paste.This makes it more nutritious and also enhances its green shade.
When the theme of the month was announced to be Green by Sunshinemom, the first thing I could relate to was Pesarattu and interestingly most of the ingredients (the green gram, green chillies, spinach , coriander leaves and curry leaves) used in the recipe are green too!!! So I am sure, it justifies her theme.
This is my entry for FIC Green hosted by Sunshinemom.

Ingredients
Method
Soak the green gram and raw rice in water for 5hrs. Drain the water and grind them to a fine paste with green chillies, curry leaves, coriander leaves, cummin seeds, spinach and coconut. Add salt. Keep aside for 2 hrs. Bring it to a rice batter like consistency.
To make the dosas:
Heat the iron tava or the non stick tava at medium. Place your hand just over the tava to check for the heat.The tava shouldnt be too hot.Drizzle few drops of oil over the tava and spread them around with a kitchen tissue paper. Ladle some batter at the centre of the tava and immediately spread them into a larger circle in a clockwise direction. Add few drops of oil along the outer sides of the dosa. Cook for 3-5min on low flame. Use a dosa spoon (flat square shaped ends) to remove it from the tava and flip it to the other side. Cook for 2-3min. Remove from heat.
Sprinkle freshly chopped raw onions over the dosa and serve hot with any chutney/ sambhar.

Love pesarattus..have one in my blog too.looks great..adding spinach to pesarattu is really different.
