EGG KHEEMA CURRY

I was in a mood to cook dinner today.So I rushed my session in gym and reached home pretty early. I had a quick shower and was all set to make a simple delicious dinner. Even my cousin reached home a bit early and she was there for the little chat session during the cooking :-)

When I opened my fridge, I was stunned to see it half empty. I just had 2 e
ggs and little peas,capsicum and potato.I had no patience to browse through any website and decide on the menu. Without any prior thought about the dish I am gonna make, I immediately placed my eggs in the pan with water and I stood staring at it. My cousin suggested egg roast with a spice paste. I denied it even before she could complete the sentence :-))) and by the time we finished our argument, we realized that eggs got overcooked. Oooppss!!!

I didnt want to waste the eggs and my cousin gave her typical very funny look meaning "you deserve this for arguing with me" and she had all smiles....A little idea popped in my mind, my counter reaction was a proud look "you wait n watch baby!!"..... aaaww!! well this is a very common situation at home......and our day doesn't come to an end without a fight or an argument.

Well,coming to the recipe, I cooled the hard boiled eggs and grated them like carrots. I made a masala mix and added the eggs to it. My family just loved it. It was just a perfect side dish for roti/naan.



Here is my recipe for it.



Ingredients:
  • 2 hard boiled eggs (cooled and grated)
  • 2 finely chopped onion
  • 1 tomato (pureed)
  • 1 small potato cubed
  • 1/2 cup frozen peas
  • 2tsp chilli powder
  • 4tsp coriander powder
  • 2tsp cummin powder
  • 1tsp turmeric powder
  • 1/2 tbs ginger-garlic paste
  • 3-4 finely chopped green chillies
  • salt
  • 1 tbs olive oil
Masala:
  • 1 cardamon
  • 2 cloves
  • 1/2" cinnamon
  • 1tsp cummin seeds
  • 1 small bay leaf


Method


  • Heat the oil in kadai. Add the masalas and cook for 2min.
  • Add the finely chopped onions and salt. Cook them till they turn translucent. Cook with the lid on. Simmer the flame.
  • Add the ginger garlic paste and green chillies. Cook till the oil emerges from the onions. Add the potatoes and peas.
  • Now add the tomato puree, and cook till the entire mix becomes thick. Check whether the potatoes have become soft.
  • Add the turmeric powder , chilli powder, corainder powder and cummin powder. Saute till the raw smell disappears. Add 1/2 cup water.
  • Finally add the grated eggs. Since the eggs absorb water, add few more spoons of water to make into a nice gravy.
  • Garnish with coriander. Adjust salt to taste.

Serve hot with rotis.
